
So, after swinging by my favorite restaurant chain and gorging myself on a lamb schwarma wrap and fattoush salad, I just couldn't eat my rice! It was just too much. Its delicious white rice with slivered almonds mixed in. So, I decided to make fried rice
I used my leftover rice,essential fat filled and anti-inflammatory olive oil, low sodium soy sauce, and more egg than usual for good for you protein. It made a very filling, healthy, energy packed and balanced meal (carbs, proteins and fats all in one!).
Energy Bomb Fried Rice
1 c. leftover cooked rice
1 tbs. olive oil
1 large egg
2 egg whites
low sodium soy sauce to taste
pepper to taste
1. Heat the olive oil in a skillet until hot. Add rice and saute a little bit.
2. Add egg and whites over rice, and mix thouroughly until egg is incorporated and cooked. (The egg whites will make it look paler than usual fried rice)
3. Season with soy sauce and pepper.

Also, on the Middle Eastern food note, Fattoush Salad dressing makes a great marinade. I bought some from my fav restaurant, and used it as a marinade on chicken for tonight's dinner. It was delicious! Oily, citrusy, aciding, herby. yum yum!
